- 3 Tbsp. flour
- 1/4 tsp. salt
- 2 c. hot milk
- dash of cayenne (if desired)
Directions

1Melt butter in saucepan; stir in flour.

2Cook slowly over low heat, stirring constantly, until mixture bubbles for about 3 minutes.

3Do not brown.

4Remove from heat; add salt, milk and cayenne.

5Stir rapidly with wooden spoon or with wire whisk.

6Cook over medium heat until sauce bubbles, stirring constantly.

7Cook 1 more minute.
