Ingredients
- 3 None scallions, trimmed and finely chopped
- 4 tbsp vegetable oil
- 2 tbsp finely chopped fresh parsley
- 1 tbsp grated fresh ginger
- 1 tbsp Dry Jerk seasoning blend
- 1 tbsp minced garlic
- 1 None lime zested, juiced
- 1 None whole chicken and roasting (about 6 lbs)
Directions

1Heat oven to 350°F. In small bowl, combine scallions, vegetable oil, parsley, ginger, seasoning blend, garlic, 1 tablespoon lime juice and 1/2 tbsp lime zest.

2Rub half of the herb seasoning mixture under the skin of the chicken. Spread remaining herb mixture evenly over chicken. Place chicken on rack set in roasting pan. Using kitchen twine, tie together chicken legs.

3Roast chicken for 1 hour and 45 mins or until thermometer inserted in thigh, not touching bone, reads 170° F. Wait for 20 minutes before carving.
