Whole Wheat Rolls

  • 1 pkg. dry yeast
  • 2 Tbsp. sugar
  • 1/4 c. warm water
  • 3 eggs, beaten
  • 1 tsp. salt
  • 2/3 c. sugar
  • 1 c. milk
  • 7 Tbsp. shortening
  • 2 1/4 c. bromated unbleached flour
  • 2 1/4 c. whole wheat flour

Directions

    Let yeast, 2 tablespoons sugar and warm water stand until dissolved.

    Combine eggs, salt and 2/3 cup sugar; beat well. Scald milk and add shortening.

    Stir until shortening is melted. Cool.

    Combine yeast mixture, milk mixture and egg mixture.

    Stir in flours and mix well.

    (Mixer can be used.)

    Place in large bowl and let rise until double in size.

    Knead down and roll on floured surface to about 2/3-inch thick.

    Cut into rolls with biscuit cutter.

    Place on baking sheet.

    Brush tops with melted margarine. Let rise at room temperature for 2 hours.

    Bake 15 to 20 minutes at 425°.
