- 4 well-beaten veal cutlets
- 4 slices Gruyere cheese
- 1/3 c. butter
- 1 tsp. grated cheese
- bread crumbs
- lemon juice
- salt and pepper
- flour
- 1 beaten egg
Directions

1Sprinkle veal with lemon juice, salt, pepper and grated cheese.

2Let sit for 5 minutes.

3Then roll in flour, egg and breadcrumbs.

4Fry on one side in hot butter.

5Turn.

6Reduce heat. Place cheese slice on each cutlet.

7Slowly fry other side.

8Serve with crisp salad.
