- 4 veal or pork slices
- 1/4 c. lemon juice
- 3/4 c. flour
- 2 eggs
- 1 c. fine bread crumbs
- 4 to 5 Tbsp. cooking oil
Directions

1Beat eggs with 1 teaspoon water and set aside.

2Beat cutlets and sprinkle with lemon juice.

3Let stand 30 minutes.

4Sprinkle a little salt on both sides of slices.

5Dip in flour, then in egg, then in bread crumbs.

6(Repeat for thicker schnitzels.)

7Let stand at room temperature for 15 to 20 minutes.

8Fry in hot vegetable oil for 4 to 6 minutes on each side.

9Serve sizzling hot, if possible.

10Serves 4.
