  • 1/4 medium apple
  • 1/4 small onion
  • 1 small link pork sausage (not smoked)
  • 1/2 c. Burgundy wine
  • 1 small piece salt pork
  • salt and pepper
  • celery leaves

Directions

    Salt and pepper duck.

    Stuff with apple, onion, sausage (with casing removed) and celery leaves.

    Add a little wine to the cavity.

    Place in an iron pot.

    Pour over rest of wine.

    Place salt pork on breast of duck.

    Cover.

    Roast at 325° for about 3 hours. Serve with orange sauce.
