- 1/4 small onion
- 1 small link pork sausage (not smoked)
- 1/2 c. Burgundy wine
- 1 small piece salt pork
- salt and pepper
- celery leaves
Directions

1Salt and pepper duck.

2Stuff with apple, onion, sausage (with casing removed) and celery leaves.

3Add a little wine to the cavity.

4Place in an iron pot.

5Pour over rest of wine.

6Place salt pork on breast of duck.

7Cover.

8Roast at 325° for about 3 hours. Serve with orange sauce.
