Ingredients

  • 2 whole ducks (1 1/2 to 2 lb. each; 3 to 4 lb. total)
  • 4 white potatoes (2 lb.)
  • 2 onions (1 lb.)
  • 2 qt. water
  • 4 tsp. salt
  • 2 tsp. black pepper
  • 2 tsp. Texas Pete hot sauce
  • 4 tsp. Worcestershire sauce

Directions

    Take ducks and split down backs.

    Put potatoes and onions in carcasses.

    Put salt and pepper on.

    Mix Texas Pete and Worcestershire sauce; put on ducks.

    Wrap all in aluminum foil; put in oven and bake for 8 hours at 250°.

    Will serve 3 to 4 people.
