- 1 tsp. olive oil
- 1 shallot, finely chopped
- 2 c. fresh mushrooms, cleaned and sliced
- 1/2 tsp. dried leaf thyme, crumbled
- 1/2 tsp. leaf oregano, crumbled
- 1/2 c. low-salt chicken broth
- salt and pepper to taste
Directions

1Heat oil in a medium size saucepan.

2Add shallot; cook over medium-high heat for 2 minutes.

3Add mushrooms, thyme and oregano; saute 30 seconds.

4Add chicken broth.

5Season with salt and pepper. Simmer 15 minutes or until mushrooms are softened.

6Makes 1 serving.
