Wild Rice-Apple Stuffing

  • 1 Tbsp. margarine
  • vegetable cooking spray
  • 1/2 c. finely chopped onion
  • 1 c. finely chopped unpeeled Granny Smith apples
  • 2 c. cooked wild rice (cooked without salt or fat)
  • 3/4 c. low sodium chicken broth
  • 1/4 c. unsweetened apple juice
  • 1/4 c. raisins
  • 1/2 tsp. salt
  • 1/2 tsp. rubbed sage
  • 1/2 tsp. dried whole thyme
  • 1/8 tsp. ground nutmeg
  • 6 (3/4 oz.) slices cracked wheat bread, cut into 1/2-inch cubes

Directions

    Melt margarine over medium heat in a large skillet coated with cooking spray.

    Add celery and onion; saute 3 minutes.

    Add apple; saute 5 minutes or until apple is tender.

    Combine apple mixture, rice and remaining ingredients in a 2-quart casserole; stir well.

    Cover and bake at 350° for 40 minutes.
