  • 2 green peppers, chopped
  • 1 sweet Vidalia onion, chopped
  • 3 cans Campbell's beef consomme
  • 2 cans water
  • 2 pkg. Uncle Ben's wild and long grain rice
  • 3 to 4 c. additional long grain white rice
  • 1 lb. mushrooms, sliced
  • 1/2 c. butter

Directions

    Melt butter.

    Saute rice with seasonings until brown.

    Chop and add other ingredients.

    Bake at 350° for approximately 1 to 2 hours, covered.

    Add extra water as needed.

    Recipe can be halved.
