- 1/2 lb. dates, halved
- 1/2 lb. pecans, coarsely chopped
- 3/4 c. flour
- 1/2 tsp. baking powder
- 2 eggs
- 3/4 c. sugar
- pinch of salt
- 1/2 tsp. vanilla
Directions

1Set oven at 300°.

2Beat eggs and sugar together until creamy. Add flour, salt and baking powder.

3Stir in dates, nuts and vanilla by hand.

4Spoon into greased 9 1/2 x 4 1/2

5x 2 1/4-inch loaf pan.

6Cover with foil and bake on middle shelf for 1 1/2 hours.

7Increase heat to 325°, remove foil and bake another 15 to 20 minutes, until a toothpick comes out clean when inserted into middle of the cake.

8Turn out and cool completely before slicing.
