Wilted Spinach Salad

- 1 lb. fresh spinach leaves
- 1/2 c. sliced green onions
- 6 slices bacon, diced
- 2 Tbsp. wine vinegar
- 1 Tbsp. lemon juice
- 1 tsp. sugar
- 1/2 tsp salt
- 1 hard cooked egg, coarsely chopped
Directions

1Wash spinach, discarding stems.

2Pat dry on paper towels. Tear and put in bowl.

3Add onion and sprinkle with pepper.

4Chill. At serving time slowly fry bacon in a skillet until crisp.

5Add vinegar, lemon juice, sugar and salt to skillet.

6Gradually add spinach, tossing just until leaves are coated and wilted slightly. Place salad in 4 bowls.

7Garnish with chopped egg.
