- 1 qt. white wine
- 2 c. water
- 1 piece cinnamon stick (3-inch)
- 3 whole cloves
- 3 whole allspice
- 5 egg yolks
- 2 Tbsp. sugar
Directions

1Bring the wine, water and spices to boiling.

2Strain.

3Discard spices.

4Beat egg yolks with sugar until thick.

5Slowly add the hot wine mixture, beating constantly until a thick foam forms at the top.

6Be careful not to curdle the yolks by pouring hot wine too fast.

7Serve in cups with wafers.

8Makes 8 to 10 servings.
