Winter Beet Soup

Ingredients
- 2 tablespoons butter
- 4 beetroots peeled and diced
- 2 carrots peeled and chopped
- 1 medium potatoes peeled and chopped
- 1 onion diced
- 4 1/4 cups vegetable stock
- 1 1/3 tablespoons horseradish piece, grated, 1-2 tbsp hot horseradish sauce could be substituted
- 1 teaspoon lemon juice
- 7 tablespoons creme fraiche
Directions

1Melt butter in a large saucepan, add beet, carrot, potato and onion and saute for 2-3 mins, stirring. Add stock, cover and simmer for 15-20 mins, until vegetables are soft.

2Meanwhile, mix horseradish, lemon juice and creme fraiche (or sour cream, if using) together, season then set aside.

3Blend soup then season. Distribute between 4 bowls then swirl in some of the horseradish cream. Serve.
