- 1 teaspoon olive oil
- 1 small red onion, chopped
- 3 garlic cloves, finely chopped
- 1 cup sun-dried tomato packed in oil, coarsely chopped
- 8 ounces marinated artichoke hearts, drained and chopped
- 14 cup pitted black olives, coarsely chopped
- 14 cup parmesan cheese, grated
Directions

1Heat large saute pan over medium heat.

2Add olive oil, onion, and garlic.

3Saute 3-4 minutes.

4Add tomatoes, artichokes.

5Saute an additional 2 minutes until heated through.

6Toss with cooked pasta and top with parmesan.
