Ingredients

  • 2 qt. sliced green tomatoes
  • 2 qt. sliced cabbage
  • 2 red peppers, chopped
  • 2 green peppers, chopped
  • 2 onions, chopped
  • 1/2 tsp. turmeric
  • 1 Tbsp. whole allspice
  • 2 c. sugar
  • 1/4 c. salt
  • 1 Tbsp. mustard seed
  • 1 qt. vinegar

Directions

    Combine tomatoes and 2 tablespoons salt.

    Let stand overnight. Drain and rinse with cold water.

    Combine turmeric, allspice, sugar, 2 tablespoons salt, mustard seed and vinegar.

    Boil 10 minutes.

    Add vegetables and cook 30 minutes.

    Seal.

    Makes 5 pints.
