- 1 tablespoon butter
- 2 onions, chopped
- 1 bouquet garni
- 1 stalk celery, diced
- 3 medium carrots, sliced
- 3 potatoes, peeled and diced
- 5 cups low-fat chicken broth
- 1 (14 ounce) can black-eyed peas, drained
- 1 cup elbow macaroni
- salt and pepper, to taste
Directions

1Prepare a bouquet garni and set aside.

2Heat butter, add onions and celery; cover and cook 4 minutes.

3Add carrots and season with salt and pepper; Cook 5 minutes uncovered.

4Add potatoes and chicken stock; drop in bouquet garni.

5Bring to a boil and cook 12 minutes at medium low.

6Add remaining ingredients and return to a boil.

7Cook 12 minutes at medium-low.
