Winter Vegetable Stew

- 2 tablespoons olive oil
- 3 cloves garlic, smashed
- 1 lb mushrooms, halved
- 1 medium zucchini, cut into 1 inch pieces
- 1 medium onion, chopped
- salt and pepper to taste
- 1 can chick peas, drained
- 1 1/2 teaspoons cumin
- 1- 28 oz can of diced tomatoes
- 2 tablespoons fresh rosemary, chopped
Directions

1In a medium sauce pot over a moderate heat, saute garlic and mushrooms in the olive oil for 2-3 minutes.

2Add in zucchini and onion.

3Season with salt and pepper.

4Saute for another 5 minutes. Add in chick peas, cumin, tomatoes, an rosemary.

5Bring this to a stew to bubble, reduce heat to low and simmer for 10 minutes.
