Winter Vegetable Stew

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, smashed
  • 1 lb mushrooms, halved
  • 1 medium zucchini, cut into 1 inch pieces
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 1 can chick peas, drained
  • 1 1/2 teaspoons cumin
  • 1- 28 oz can of diced tomatoes
  • 2 tablespoons fresh rosemary, chopped

Directions

    In a medium sauce pot over a moderate heat, saute garlic and mushrooms in the olive oil for 2-3 minutes.

    Add in zucchini and onion.

    Season with salt and pepper.

    Saute for another 5 minutes. Add in chick peas, cumin, tomatoes, an rosemary.

    Bring this to a stew to bubble, reduce heat to low and simmer for 10 minutes.
