Ingredients

  • Vegetable oil for frying, about 1 cup
  • 6 won ton skins, about 3 inches in diameter
  • 4 oz. Thai-flavored baked tofu, diced
  • 5 oz. precooked edamame
  • 1/4 cup cilantro leaves
  • 3 Tbs. dry-roasted peanuts
  • 3 Tbs. Thai peanut sauce

Directions

    Heat oil in large skillet over medium heat.

    When hot, fry won ton skins until golden.

    Using tongs, turn skins over, and fry for several seconds on other side.

    Remove from heat, and place on paper towels to blot extra oil.

    Set aside.

    Combine tofu, edamame, cilantro leaves, peanuts and peanut sauce in mixing bowl, stirring well to combine.

    Divide evenly, mound mixture on skins and serve.
