- Vegetable oil for frying, about 1 cup
- 6 won ton skins, about 3 inches in diameter
- 4 oz. Thai-flavored baked tofu, diced
- 5 oz. precooked edamame
- 1/4 cup cilantro leaves
- 3 Tbs. dry-roasted peanuts
- 3 Tbs. Thai peanut sauce
Directions

1Heat oil in large skillet over medium heat.

2When hot, fry won ton skins until golden.

3Using tongs, turn skins over, and fry for several seconds on other side.

4Remove from heat, and place on paper towels to blot extra oil.

5Set aside.

6Combine tofu, edamame, cilantro leaves, peanuts and peanut sauce in mixing bowl, stirring well to combine.

7Divide evenly, mound mixture on skins and serve.
