  • 2 1/4 pounds pork spareribs
  • 4 tablespoons sugar
  • 5 ginger slices
  • 4 tablespoons rice vinegar dark
  • 2 teaspoons chili bean sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon tomato paste
  • 2 teaspoons spring onion chopped

    Cut spareribs into medium-size pieces

    Put ribs in boiling water. When water start again to boil, drain

    Stir-fry ribs on high heat with little of oil until it brown from each side. Remove from the wok

    Add to wok sugar, stir on medium heat until it melted and darken

    Add pork ribs, ginger slices, spring onion and fry a little

    Pour dark rice vinegar, chili-bean sauce, soy sauce and tomato paste. Stir

    Add water to cover the ribs and boil about 1 hour untill water is almost evaporate and sauce become thick
