- 3 egg whites
- 1 egg
- 1 portabella mushroom
- 12 cup sliced red onion
- 1 garlic clove, sliced
- 12 cup Baby Spinach
- 14 cup shredded low-fat Mexican cheese
- salt
- pepper
- 3 tablespoons olive oil
- Pam cooking spray
Directions

1mix egg whites and egg together with 1/4 cup water until frothy.

2turn saute pan on to medium heat.

3Add 3 TBSP olive oil , garlic and vegetables.

4Saute for about 2 minutes.

5Spray omelet pan with PAM and put on medium high heat.

6Add egg mixture and stir gently from center to sides as eggs begin to set up.

7When top of egg mixture begins to look dry, gently top with vegetables.

8Add cheese and let cook over low heat for another minute or two.

9Tip pan to slide omelet onto plate.

10Add salt and pepper to taste.
