  • 3 egg whites
  • 1 egg
  • 1 portabella mushroom
  • 12 cup sliced red onion
  • 1 garlic clove, sliced
  • 12 cup Baby Spinach
  • 14 cup shredded low-fat Mexican cheese
  • salt
  • pepper
  • 3 tablespoons olive oil
  • Pam cooking spray

Directions

    mix egg whites and egg together with 1/4 cup water until frothy.

    turn saute pan on to medium heat.
  3. 3
    Add 3 TBSP olive oil , garlic and vegetables.

    Saute for about 2 minutes.

    Spray omelet pan with PAM and put on medium high heat.

    Add egg mixture and stir gently from center to sides as eggs begin to set up.

    When top of egg mixture begins to look dry, gently top with vegetables.

    Add cheese and let cook over low heat for another minute or two.

    Tip pan to slide omelet onto plate.

    Add salt and pepper to taste.
