- 1 lb. eggplant
- 1/2 lb. bread crumbs
- 1/2 c. evaporated milk
- 1/4 c. whole milk
- 1/2 stick margarine
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 1/2 c. chopped pimento
- 2 eggs, beaten
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. sage
- 1/8 tsp. m.s.g.
- 1 1/2 c. grated Cheddar cheese
Directions

1Peel and cube eggplant; boil 30 minutes.

2Saute vegetables in margarine until tender.

3Add to crumb and milk mixture.

4To drained eggplant, add remaining ingredients, except cheese.
