Ingredients

  • 1 lb. eggplant
  • 1/2 lb. bread crumbs
  • 1/2 c. evaporated milk
  • 1/4 c. whole milk
  • 1/2 stick margarine
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1/2 c. chopped pimento
  • 2 eggs, beaten
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. sage
  • 1/8 tsp. m.s.g.
  • 1 1/2 c. grated Cheddar cheese

Directions

    Peel and cube eggplant; boil 30 minutes.

    Saute vegetables in margarine until tender.

    Add to crumb and milk mixture.

    To drained eggplant, add remaining ingredients, except cheese.
