Ingredients
- 1 1/2 c. lukewarm water
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 1 cake compressed yeast or 1 pkg. dry yeast
- 2 eggs
- 2/3 c. soft shortening
- 1 c. lukewarm potatoes
- 7 to 7 1/2 c. sifted plain flour
Directions

1Mix together 1 1/2 cups water, sugar and salt.

2Crumble yeast into mixture; stir until dissolved.

3Add 2 eggs and shortening. Mix first with spoon, then by hand the potatoes and flour.

4Knead until smooth.

5Place in refrigerator for about 2 hours.

6Remove; shape dough into desired rolls, coffee cake, etc.

7Cover; let rise 1 1/2 to 2 hours, until light.

8Bake according to directions for each type roll or pastry.

9Bake rolls at 400° for 12 to 15 minutes.

10Makes 4 dozen.
