Yeast Corn Bread

Ingredients
- 2 pkg. active dry yeast
- 1 1/2 c. warm water
- 1/4 c. sugar
- 1 stick margarine, melted
- 1/2 c. nonfat dry milk powder
- 2 tsp. salt
- 2 eggs, beaten
- 3 1/2 c. unsifted flour
- 1 3/4 c. yellow corn meal
Directions

1Sprinkle yeast over warm water and stir until dissolved.

2Stir in remaining ingredients and beat until blended.

3(This is a stiff batter.)

4Turn into two greased 8-inch round pans or two greased 8 1/2-inch loaf pans.

5(I usually make one of each.

6I cut the round into wedges to serve warm and slice the loaf to serve buttered or for sandwich bread or breakfast toast.)

7Cover and let rise in warm place until doubled in bulk, about 1 hour.

8Bake at 375° for 35 minutes.
