Yellow Casserole

Ingredients

  • 2 lb. yellow squash, in 1/4-inch pieces
  • 1/2 c. water
  • 1/2 tsp. salt
  • 1 c. chopped yellow onion
  • 1 c. chopped sweet yellow pepper
  • 1/4 c. margarine, melted
  • 1 egg, beaten
  • 2/3 c. mayonnaise
  • 1 c. shredded Cheddar cheese
  • 2 tsp. sugar
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 1/8 tsp. pepper

Directions

    Combine squash, water and salt in a pan; bring to a boil, cover and simmer 10 minutes.

    Drain.

    Saute onion and yellow pepper in butter 3 minutes.

    Combine melted magarine, egg, mayonnaise, salt, pepper and sugar.

    Add all other ingredients. Place in greased baking dish and bake at 350° for 30 minutes. Serves 8.
