- 1 1/2 c. sugar
- 3/4 c. butter or margarine, softened
- 2 eggs
- 1 1/2 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1 1/4 c. milk
Directions

1In mixer bowl, cream together sugar and butter until light and fluffy (about 8 to 10 minutes at medium speed of electric mixer), scraping bowls frequently.

2Add eggs and vanilla; beat at medium speed about 2 minutes or until mixture is light and fluffy.

3Stir together flour, baking powder and 1 teaspoon salt.

4Add to creamed mixture alternately with milk, beating at low speed after each addition.

5Beat 1 minute at end.

6Turn batter into two greased and lightly floured 9 x 1 1/2-inch round baking pans.

7Bake in a 350° oven for 30 to 35 minutes or until cake tests done.

8Cool 10 minutes.

9Remove from pan and cool thoroughly on wire racks.

10Fill with Lemon Filling.

11Frost with Seven Minute Frosting.

12Sprinkle shredded coconut on sides of cake, if desired.
