Ingredients
- 4 or 5 medium yellow squash, peeled and sliced
- 1 medium onion, chopped
- 1 can condensed cream of chicken soup
- 1 c. sour cream
- 1 c. shredded raw carrots
- 1 stick (1/2 c.) margarine
- 1 (8 oz.) pkg. chicken stuffing mix
Directions

1Cook squash and onion in water for 5 minutes.

2Drain.

3Mix together soup and sour cream.

4Fold in shredded carrot, squash and onion.

5Melt margarine in medium saucepan.

6Stir in stuffing mix. Spread half of stuffing in greased 8 x 8 x 2-inch baking dish. Pour vegetable mixture over stuffing and top with other half of stuffing.

7Bake at 350° for 30 minutes.

8Let stand about 15 minutes before serving.
