  • 2 lb. squash, cooked and mashed
  • 1 carrot, grated
  • 1 medium onion, chopped
  • 2 Tbsp. pimento, chopped
  • 1 can cream of mushroom soup
  • 1 c. sour cream
  • 1 stick margarine
  • 1 pkg. Pepperidge Farm cornbread stuffing mix

    Melt margarine in saucepan; add stuffing mix.

    Mix first 6 ingredients.

    Add 1/2 stuffing mixture to squash mixture and mix well.

    Top with remaining stuffing.

    Bake in casserole dish at 325° for 25 to 30 minutes.
