- 2 lb. yellow squash, sliced and quartered
- 1/2 c. chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. grated carrots
- 1 (8 oz.) pkg. herb stuffing mix
- 1 1/2 sticks butter
Directions

1Boil squash and onion for 10 minutes.

2In a bowl, mix soup, sour cream, carrots, squash and onions.

3Melt butter and pour into a 9 x 12-inch baking dish.

4Add 1/2 the stuffing mix.

5Pour squash mixture over the top.

6Sprinkle with remaining crumb mixture and bake at 350° for 25 to 30 minutes.
