Yellow Squash Casserole

  • 2 lb. yellow squash, sliced and quartered
  • 1/2 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. grated carrots
  • 1 (8 oz.) pkg. herb stuffing mix
  • 1 1/2 sticks butter

Directions

    Boil squash and onion for 10 minutes.

    In a bowl, mix soup, sour cream, carrots, squash and onions.

    Melt butter and pour into a 9 x 12-inch baking dish.

    Add 1/2 the stuffing mix.

    Pour squash mixture over the top.

    Sprinkle with remaining crumb mixture and bake at 350° for 25 to 30 minutes.
