Yellow Squash Casserole

  • 2 Tbsp. margarine
  • 1/4 c. Ritz crackers
  • 1/4 c. water
  • 1/2 tsp. salt
  • 1 lb. yellow squash, sliced
  • 1/4 c. mayonnaise
  • 1 egg, beaten
  • 1/2 c. Cheddar cheese, shredded
  • 2 Tbsp. margarine, melted
  • 1 1/2 tsp. sugar
  • 1/4 to 1/2 tsp. instant minced onion

Directions

    Toss melted butter and crumbs; set aside.

    Cook squash in water until tender.

    Put in a 1-quart casserole dish.

    Mix together mayonnaise, egg, cheese, margarine, sugar and onion. Pour over squash, mixing well.

    Add crumbs topping.

    Bake at 325° to 350° for 30 minutes.
