Yellow Squash Pie

  • 5 medium size yellow squash, sliced
  • 1/4 c. melted margarine
  • 3/4 c. sugar
  • 1 Tbsp. lemon extract
  • 1 Tbsp. all-purpose flour
  • 2 egg yolks, beaten
  • dash of salt
  • 1 baked 9-inch pie shell

Directions

    Cook squash in a small amount of boiling water until tender; drain well and mash.

    Combine margarine, sugar, lemon extract, flour, eggs and salt.

    Add squash, stirring well.

    Spoon squash mixture into pie shell and bake at 375° for 20 to 25 minutes or until firm.
