- 5 medium size yellow squash, sliced
- 1/4 c. melted margarine
- 3/4 c. sugar
- 1 Tbsp. lemon extract
- 1 Tbsp. all-purpose flour
- 2 egg yolks, beaten
- dash of salt
- 1 baked 9-inch pie shell
Directions

1Cook squash in a small amount of boiling water until tender; drain well and mash.

2Combine margarine, sugar, lemon extract, flour, eggs and salt.

3Add squash, stirring well.

4Spoon squash mixture into pie shell and bake at 375° for 20 to 25 minutes or until firm.
