Yorkshire Gingerbread

Ingredients

  • 8 oz. margarine
  • 8 oz. soft brown sugar
  • 8 oz. treacle or syrup
  • 12 oz. plain flour
  • 4 tsp. ground ginger
  • 3 tsp. cinnamon or mixed spice
  • 2 eggs, beaten
  • 1/2 pt. milk
  • 2 tsp. bicarbonate of soda

Directions

    Grease and line a 12 x 8-inch pan.

    Preheat the oven to 350°. Gently heat margarine, sugar and syrup until just melted.

    In a bowl, sift the flour, ginger and cinnamon; mix well until evenly colored.

    Stir in the melted mixture.

    Beat the eggs into this mixture.

    Warm the milk until lukewarm; add the bicarbonate of soda.

    Beat well until smooth and even (mixture will be very soft).

    Pour mixture into greased pan and bake for 1 to 1 1/4 hours.

    Leave in the baking pan for about 10 minutes before cutting into squares.
