- 4 oz. flour (plain)
- 1 egg
- 2 pt. milk and water (2/3 milk and 1/3 water)
- 2 tsp. salt
- 1 oz. drippings
Directions

1Sift flour and salt into bowl.

2Add egg and a little milk.

3Mix to a smooth batter.

4Beat for 5 minutes until air bubbles appear. Then add the remaining milk slowly.

5Leave to stand before using. Heat drippings in a tin (8 x 10-inch) or small muffin tins.

6Pour the batter into pan.

7Bake on top rack for 30 minutes at 425°. Muffin tins should bake for 10 to 15 minutes.
