- 2 eggs
- 1 cup flour
- 1/4 tsp salt
- 3/4 cup milk
Directions

1Heat oven to 450F.

2Beat eggs well.

3Add salt to flour, then add to eggs and stir in milk.

4Whisk well until smooth.

5Add a small amount of roast drippings to all holes in a muffin tin.

6Heat the drippings in the oven until hot.

7Carefully remove the tin from the oven and pour in the batter, filling 3/4 full.

8Return to the oven and cook 10-15 minutes, or until puddings have puffed and risen.
