- 4 lb. beef round boneless rump roast
- 2 1/4 oz. jar sliced mushrooms, drained
- 1 to 2 cloves of garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1If roast is a triangular-shaped piece, cut 2 horizonal slits about 2 inches apart almost to other side to make two two deep pockets.

2Stuff mushrooms, garlic, salt and pepper into pockets. Season outside of roast with a little additional salt and pepper and roast as directed.

3If roast is rolled and tied, carefully unroll.

4Sprinkle mushrooms, garlic, salt and pepper over unrolled roast.

5Re-roll and re-tie.

6Season outside of roast with a little additional salt and pepper.

7Insert meat thermometer into thickest part of meat.

8Place roast, fat side up, on rack in shallow roasting pan.

9Roast at 325° for 1 3/4 hours or 160° on thermometer for medium.
