- 1-1/2 lb. yuca (cassava), peeled, chopped
- 1/2 cup KRAFT Shredded Mozzarella Cheese
- 1 Tbsp. flour
- 1/2 tsp. CALUMET Baking Powder
- 1 egg, separated
- 15 RITZ Crackers, finely crushed
- 1 cup corn oil
- 1/2 cup KRAFT Real Mayo Mayonnaise
- 2 cloves garlic, minced
Directions

1Cook yuca in saucepan of boiling water 25 to 30 min.

2or until tender; drain.

3Mash yuca; place in medium bowl.

4Add cheese, flour, baking powder and egg yolk; mix well.

5Beat egg white in small bowl with mixer on high speed until stiff peaks form.

6Gently stir into yuca mixture.

7Divide into 24 portions; roll each into log.

8Dip logs, 1 at a time, in cracker crumbs, turning to evenly coat.

9Heat oil in medium saucepan to 375 degrees F. Meanwhile, mix mayo and garlic until blended.

10Add yuca logs, in batches, to hot oil; cook 4 min.

11or until golden brown.

12Remove from oil with slotted spoon; drain on paper towels.

13Serve warm with mayo mixture.
