Yum Rum Pineapple

  • 2 Large Ripe Pineapples
  • 1 1/2 Cups Maple Syrup
  • 1/2 Cup Meyers or Parrot Bay Rum
  • 1/4 Cup Orange Juice
  • 1/4 Tsp. Salt
  • 4 Tbls. Cinnamon

Directions

    Slice pineapple into 1/2 inch rounds. You may leave the skin on if desired.

    Mix all ingredients together in a bowl until all is incorporated.

    Place mixture into a flat dish or ziplock baggie(s).

    Add pineapple and let marinade for at least 1 hour. Longer for a more concentrated flavor.

    Place pineapple slices over medium/high preheated grill.

    Wait for sear marks and turn pineapple only once.

    Serve hot or chilled as a side dish or dessert with vanilla ice cream with a drizzle of rum and sprinkle of cinnamon. Enjoy the oohhss and ahhhhs!
