- 1/4 c. Parmesan cheese, grated
- 1 jar spaghetti sauce
- 3 eggs, slightly beaten
- oregano to taste
Directions

1Boil eggplant, covered in water, until tender; drain and mash. Add remaining ingredients; mix well.
