  • 8 medium potatoes
  • 1 bay leaf
  • 1 can cream of chicken soup
  • 1/4 c. melted margarine
  • 1 1/2 c. sour cream
  • 1 1/2 tsp. salt and pepper
  • 1 finely chopped small onion
  • 2 c. grated cheese, divided
  • 1 1/2 c. crushed potato chips

Directions

    Cook the potatoes in salted water with a bay leaf.

    When cold, peel and grate coarsely.

    Put potatoes in a greased 9 x 13-inch pan.

    Mix together the soup, melted margarine, sour cream, salt, pepper, onion and 1 1/2 cups grated cheese and pour over potatoes. Cover; bake at 350° for 30 to 35 minutes.

    Sprinkle top with 1/2 cup grated cheese and the crushed potato chips.

    Bake a few minutes more.
