  • 2 (17 oz.) cans yams, drained and cut into 1/2-inch slices
  • 2 medium ripe bananas, sliced
  • 1/2 c. margarine
  • 1/4 tsp. salt
  • 1/3 c. light corn syrup
  • 2 Tbsp. orange juice
  • 1/2 c. coconut

Directions

    Alternate layers of yams and banana slices in a 1-quart casserole ending with a layer of yams.

    Melt margarine.

    Stir in salt, corn syrup and orange juice.

    Pour over yams and bananas. Cover and bake at 375° for 30 minutes.

    Baste yams and bananas with liquid.

    Sprinkle with coconut.

    Bake, uncovered, 10 minutes or until coconut is browned.
