Ingredients

  • 1 c. all-purpose bleached and enriched white flour
  • 1 tsp. baking powder
  • 2 Tbsp. white granulated sugar
  • powdered sugar
  • 1 lb. low-fat Ricotta cheese
  • 2 1/2 c. vegetable oil
  • 1 Tbsp. vanilla
  • 2 eggs

Directions

    Using cooking thermometer, heat vegetable oil in a deep saucepan to 375°.

    Mix all ingredients together, except for powdered sugar.

    Carefully add a tablespoon of mixture at a time to hot oil.

    Within a minute, balls will form and puffs will turn golden brown.

    Drain on paper towel and sprinkle with powdered sugar.

    Serve warm.
