  • 3 red, yellow or green peppers, cut in half lengthwise
  • 1 medium tomato, diced
  • 1 Tbsp. chopped cilantro
  • 2 c. cooked Minute rice
  • 1/4 lb. Velveeta pasteurized process cheese spread
  • 1/4 c. celery slices

Directions

    Preheat oven to 350°.

    Remove seeds from peppers.

    Combine remaining ingredients; fill each pepper with approximately 1/3 cup of rice mixture.

    Place in shallow baking dish.

    Cover.

    Bake for 30 to 35 minutes or until thoroughly heated.
