- 3 red, yellow or green peppers, cut in half lengthwise
- 1 medium tomato, diced
- 1 Tbsp. chopped cilantro
- 2 c. cooked Minute rice
- 1/4 lb. Velveeta pasteurized process cheese spread
- 1/4 c. celery slices
Directions

1Preheat oven to 350°.

2Remove seeds from peppers.

3Combine remaining ingredients; fill each pepper with approximately 1/3 cup of rice mixture.

4Place in shallow baking dish.

5Cover.

6Bake for 30 to 35 minutes or until thoroughly heated.
