  • 2 Tbsp. lime juice
  • 1 medium tomato, peeled
  • 3 cloves garlic, minced
  • handful of fresh parsley
  • handful of fresh cilantro
  • 3/4 tsp. cumin
  • 1 scallion, minced
  • 1/4 tsp. salt
