Ingredients

  • 2 1/2 c. carrots, cut julienne
  • 2 1/2 c. zucchini, cut julienne
  • 2 Tbsp. olive oil
  • 1 garlic clove, crushed (optional, but I like and usually use 2!)
  • 1 Tbsp. fresh lemon juice
  • 3 Tbsp. dry white wine

Directions

    Use a large frying pan or wok. Add oil and garlic to a hot pan.

    Then add carrots. Saute or stir-fry for 2 minutes.

    Add zucchini. Toss about for 3 minutes.
  4. 4
    Add the lemon juice and wine. Toss about and remove from heat.
  5. 5
    Serve immediately.
