- 2 c. cooked rice
- 1 lb. Jack cheese, grated
- 4 small sliced zucchini
- 1 large sliced tomato
- 2 c. chicken, sliced or cubed (can be omitted and made vegetarian)
- 1 large (16 oz.) container sour cream
- 1 (7 oz.) can diced green chilies
- 1 tsp. oregano
- 1 tsp. garlic salt
- 2 Tbsp. chopped onion
- 2 Tbsp. green pepper
- 1 Tbsp. chopped fresh parsley
Directions

1Butter a 3-quart casserole.

2Layer as follows:

3rice, chicken, cheese (save 1 cup), zucchini and tomato.

4Mix sour cream, chilies, oregano, garlic salt, green pepper and onion in a separate bowl.

5Pour over layered casserole.

6Sprinkle with remaining cheese and parsley.

7Bake, uncovered, for 1 hour at 325°.
