  • 4 cups flour, all-purpose
  • 1 tablespoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 tablespoons cinnamon
  • 1/2 teaspoon nutmeg
  • 5 large eggs
  • 2 cups sugar
  • 1 cup brown sugar firmly packed
  • 1 1/2 cups vegetable oil
  • 1 tablespoon vanilla extract
  • 2 cups zucchini shredded
  • 1 cup apples shredded
  • 1 1/2 cups nuts chopped

Directions

    Combine the first six dry ingredients; set aside.

    In a large bowl, combine the eggs, sugars, oil, and vanilla.

    Beat at medium speed with an electric mixer until well blended.

    By hand stir in the zucchini, apples, and nuts.

    Add the dry ingredients and stir just until moistened.

    Spoon the batter into three greased and floured 8 1/4 x 4 1/2 x 3-inch loaf pans.

    Bake at 350F (180C).

    for 50 to 55 minutes or until a pick inserted in the centers comes out clean.

    Cool for 10 minutes.

    Remove from pan and cool completely.

    Wrap and store overnight.
