- 3 or 4 zucchini
- 2 beaten eggs
- 1/2 c. onion, finely chopped
- 1 c. grated Velveeta cheese (about)
- salt and pepper
- 1/2 c. water
Directions

1Scoop out centers of zucchini; cut this into small pieces. Place into a bowl.

2Add the beaten eggs, onion, cheese, salt and pepper.

3Stir and spoon into shells.

4Bake.

5Put 1/2 cup water in casserole before baking.

6Bake at 350° for about 45 minutes, covered, and for 15 minutes, uncovered.
