Ingredients

  • 3/4 c. margarine or soft butter
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 c. coconut
  • 3/4 c. chopped dates
  • 2 c. shredded zucchini
  • 1 c. chopped nuts

Directions

    Cream butter, sugars, eggs and vanilla.

    Gradually add dry ingredients; beat well.

    Stir in coconut, chopped dates and shredded zucchini; mix well.

    Put into a 10 x 15-inch greased pan. Bake for 35 to 40 minutes at 350°.
