  • 3 eggs, well beaten
  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. raw, grated zucchini
  • 2 tsp. vanilla
  • 1 c. vegetable oil
  • 1 c. chopped nuts

Directions

    Combine beaten eggs, sugar, vanilla and oil; beat.

    Add alternately, zucchini and flour mixture.

    Add nuts.

    Bake at 325° approximately 45 minutes to 1 hour, either in 2 loaf pans or an 8 x 12-inch pan.

    Test for doneness with a toothpick.
