Ingredients
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 3/4 c. chopped walnuts or pecans
- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 2 tsp. vanilla
- 2 c. coarsely shredded zucchini
- 1 (8 oz.) can crushed pineapple, well drained
Directions

1Combine dry ingredients and set aside.

2Beat eggs lightly in large mixing bowl.

3Add sugar, oil and vanilla.

4Beat until creamy.

5Stir in zucchini and pineapple.

6Add dry ingredients, stirring only until moistened.

7Pour batter into 2 well-greased and floured loaf pans.

8Bake at 350° for 1 hour or until done. Cool 10 minutes; turn out on racks.
